1 ½ kilograms roasted pork roulade
salt
freshly ground peppers
3 garlic cloves
1 bunch Basil
3 rosemary
4 oregano
4 thyme
8 Sage
½ lemon (juiced)
5 Tbsps olive oil

Preparation steps

1.

Spread meat on work surface and rub with salt and pepper to taste.

2.

Peel garlic and chop finely. Rinse the herbs, chop finely, shake dry and pluck the leaflets.

3.

Mix garlic, herbs, lemon juice and olive into a paste and rub meat with 2/3 of the paste.

4.

Roll roast and tie with kitchen twine. Brush with the remaining paste.

5.

Wrap roast in plastic wrap and refrigerate for about 2 hours. Then broil until golden brown on a rotisserie for about 1 1/4 hours.

6.

Allow the roast to rest at least 10 minutes to allow the meat juices to distribute.

7.

Then take the roast off the spit, remove twine and cut the meat into thin slices. Arrange on a plate and serve.
