Preparation steps

1.

Rinse and dry celery, cut diagonally into small pieces. Peel onion, cut in half lengthwise and cut crosswise into thin strips. Peel carrots and chop. Cut potatoes and kohlrabi into cubes. Rinse and dry piri piri  pepper, halve and remove seeds, chop finely.

2.

Peel garlic and chop finely. Heat oil in a saucepan and saute garlic with peppers and onion. Add the rest of vegetables (except peas and corn) and sauté briefly, add vinegar and tomato paste.

3.

Add tomatoes, including juice, and crush lightly with a spoon. Add broth and season with salt, pepper, sugar and cayenne pepper. Bring to a boil, lower heat and simmer for about 20 minutes.

4.

Add peas and corn and simmer for another 5-10 minutes. Season soup to taste and serve garnished with parsley.
