1.333 cups cream (18% fat)
7 ozs Dark chocolate (70% cocoa solids)
½ Tbsp brown sugar
vanilla extract
1 egg (beaten)

Preparation steps

1.
Heat the cream in a pan to boiling point. Remove from the heat.
2.
Break up the chocolate and add to the hot cream. leave to stand for 5 minutes, until the chocolate has melted, then stir until smooth.
3.
Stir in the sugar, vanilla and egg and place over a very low heat. Beat until the mixture is very smooth, but do not allow to become hot.
4.
Pour into 4-6 ramekins or pots and chill for at least 4 hours until set.
