- 600 grams small, new potatoes
- salt
- 400 grams green Beans
- 4 eggs
- 1 red onion
- 150 grams Turkey ham (sliced)
- 2 Tbsps grainy Mustard
- 1 tsp honey
- 2 Tbsps Wine vinegar
- 4 Tbsps warm Vegetable broth
- 4 Tbsps sunflower oil
- freshly ground peppers
Preparation steps

Rinse potatoes thoroughly and boil in salted water until al dente, about 20 minutes. Drain and let cool.

Meanwhile, rinse, trim and boil beans in salted water, about 8 minutes. Cook eggs until hard-boiled, about 10 minutes. Rinse, peel and cut eggs into quarters. Peel, halve and thinly slice onion. Cut ham into thin strips.

For the dressing: Combine mustard, honey, vinegar, broth and oil in a jar. Season with salt and pepper. Seal jar and shake vigorously to combine. Season to taste.

Cut potatoes into pieces and transfer to a bowl, along with all other prepared ingredients. Add dressing to taste and toss gently to combine. For best flavor, chill about 30 minutes before serving.
