Cook the beetroot in a pan of boiling salted water for 20 minutes. Drain and cut into small cubes.

Put the red wine vinegar, wine, cloves and allspice in a pan and bring to a boil. Add the onions and apples and simmer for 10 minutes.
3.
Add the beetroot, ginger, raisins and brown sugar and simmer for a further 15 minutes.
4.
Remove the cloves and allspice and season with salt to taste.
5.
Pour into sterilised jars and seal tightly. Store in a cool, dark place and consume quickly after opening.
