- 35 ozs black Salsify
- 1 unwaxed lemon (juice and zest)
- 1 tsp sugar
- 1.333 cups Prosciutto (cut into 1.5 cm strips)
- 5 Tbsps rapeseed oil
- 1 tsp honey
- 2 Tbsps white wine vinegar
- 2 Tbsps fresh parsley (chopped)
Preparation steps

Wearing gloves, peel the salsify, wash it and immediately put the stalks in a bowl of water and lemon juice. Once they are all peeled, drain well and boil in salted water with the sugar for around 20 minutes until cooked. Quench in cold water, pat dry and cut in halves or thirds, at a slight angle.

Wrap the strips of ham in a spiral around the salsify and arrange on a large serving plate.

For the dressing, whisk together the oil, honey, vinegar, lemon juice and parsley and season to taste with salt and ground black pepper. Drizzle over the salsify and serve.
