Pumpkin Bread

- 9 ozs Pumpkin
- 2 Tbsps butter
- 7 ozs Pastry flour
- 10 ozs Spelt flour
- 1 ½ ozs fresh Yeast
- 1 tsp sugar
- 1 Tbsp cinnamon
- ½ inch ginger (finely grated)
- 1 tsp Sea salt
- 3 ½ ozs Pumpkin seed
- Pastry flour (for work surface)
Preparation steps
Peel pumpkin, mash or puree flesh, sauté in butter in a saucepan and add approximately 2 ounces of water. Boil until the pumpkin is soft.
Meanwhile, mix the yeast in a small bowl with 1 tablespoon lukewarm water with 1 teaspoon sugar and 1 tablespoon flour. Mix dough, dust with a little flour, and let rest for at least 15 minutes.
Add the remaining spelt and pastry flour in a bowl.
Season pumpkin puree with cinnamon and ginger. Add pumpkin puree to flour. Knead dough, again dust with little flour, cover dough with a cloth and let rest about 45 minutes.
Place dough on the floured work surface, add 3/4 of pumpkin seeds, knead and shape into a loaf. Place loaf on a baking tray, brush with water, cover and let rest again 60 min.
Preheat the oven to 400°F. Bake loaf in the oven for about 35-40 minutes.
When cooked, allow bread to cool on a wire rack.
