- For the rosti
- 600 grams potatoes
- 300 grams Pumpkin
- 1 Tbsp Pastry flour
- 1 egg
- 2 Tbsps sugar
- 1 pinch salt
- clarified butter (to fry)
- For fruit skewers
- Mandarin orange
- Grape
- Wooden skewer
Preparation steps

For the skewers, peel the potatoes and grate. Grate the pumpkin pulp and mix with grated potatoes. Squeeze out the potato-pumpkin mixture and mix with flour, sugar and egg. Season with a little salt. Make small balls or rosti from the mixture.

Heat butter in a pan and fry the rosti in it in portions until golden brown on both sides. Keep the fried rosti warm (70°C) (approximately 160°F) until all rosti are fried.

Serve the fried rosti on plates with skewers of mandarins and grapes.
