Peel the quince, remove the seeds, and cut into wedges. Add to a bowl and drizzle with the lemon juice. Slit the vanilla pods lengthwise and scrape out the seeds. Bring the sugar, cloves, wine, vanilla seeds, and water to a boil.

Add the quince slices to the boiling mixture. Cook for 5 minutes, or until al dente. Remove with a slotted spoon. Continue to boil the liquid 5 more minutes, until reduced slightly. Add the reduced liquid back to the quince. Serve garnished with the pecans as a dessert. Or you could also can the compote using mason jars.
