Raisin Bread
Ingredients
- For the dough
- 400 grams Pastry flour
- ½ cube Yeast (approximately 21 grams)
- 125 grams sugar
- 125 grams golden raisin
- 150 grams butter
- 1 pinch salt
- 2 Tbsps Vanilla sugar
- 1 organic lemon (zested)
- 2 eggs
- ⅛ l Whipped cream
- Pastry flour (for kneading)
- For the decoration
- 1 egg
- 1 Tbsp Orange blossom water
- 50 grams sugar
- 1 generous pinch allspice (ground)
- 300 grams candied Fruit (cherries, apricots and figs)
Preparation steps
For the dough: Sift flour into a bowl and create a well in the middle. Add yeast, 1 tablespoon sugar and 2 tablespoons of lukewarm water to well. Sprinkle with flour, cover and let rise in a warm place for about 1 hour.
Rinse raisins with hot water and dry. Melt butter. Combine raisins, melted butter, salt, vanilla sugar, lemon zest, eggs, cream, remaining sugar and about 100 ml (approximately .4 cup) of lukewarm water and stir into flour mixture. Knead into a workable dough. Cover and let rise 30 minutes more.
Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.
Place dough on a floured surface and knead again. Shape into a ball and press a hole in the middle to form a wreath. Place dough on baking sheet.
Beat egg and orange blossom water and brush onto dough. Use kitchen shears to cut small notches onto dough. Combine granulated sugar and allspice and brush onto dough. Top with candied fruit and bake until golden brown, about 45 minutes.
Remove and let cool on a wire rack. Slice and serve.
