- 350 grams Red cabbage
- 2 thin stalks Leeks
- salt
- 3 Pear
- 2 Tbsps lemon juice
- 1 shallot
- 200 grams sour Whipped cream
- freshly ground peppers
- 1 tsp sugar
- ½ tsp ground allspice
- 2 Tbsps Red wine vinegar
- 1 Tbsp chopped parsley
Preparation steps

Rinse cabbage, cut into thin slices and place into a bowl of boiling water for 5 minutes. Drain in a colander. Rinse and dry leeks, cut diagonally into 2 cm (approximately 3/4 inch ) thick slices. Blanch in boiling salted water for 5 minutes. Drain, rinse with cold water and drain again. Peel pears, cut into quarters, core and cut into slices. Drizzle with lemon juice. Combine with cabbage and leeks in a bowl.

Peel shallot and cut into very small pieces. Combine with sour cream and vinegar; season with salt, pepper, sugar and allspice. Add parsley. Drizzle dressing over the salad, mix gently and serve.
