- For the pastry
- 2 cups all-purpose flour
- 1 pinch salt
- ¾ cup unsalted butter
- water
- For the filling
- 4 cups Cherries (pitted)
- 2 Tbsps butter (diced)
- 2 Tbsps plain flour
- 1 Tbsp lemon juice
- ½ cup sugar
- To decorate
- powdered sugar
Preparation steps
1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a 23cm|9" heart-shaped pie tin or dish.

For the pastry: put the flour and salt into a mixing bowl and rub in the butter until the mixture resembles breadcrumbs. Add just enough water to form a dough. Turn out onto a lightly floured surface and knead lightly until smooth.

Roll out 2/3 of the pastry and line the tin.

For the filling: mix together all the ingredients and put into the pastry case.

Roll out the remaining pastry and the trimmings. Using a pastry wheel or sharp knife, cut the pastry into strips about 1cm|1/2" wide. Lay half the strips diagonally across the filling and the remaining strips diagonally in the opposite direction.

Bake for 10 minutes, then reduce the oven temperature to 190°C (170° fan) 375°F gas 5 and bake for a further 25-30 minutes, until the pastry is golden.
7.
Cool in the tin and sift over a little icing sugar just before serving.
