1 Kitchen scale, 1 Teaspoon, 1 große Mixing bowl, 1 Hand mixer, 1 Cutting board, 1 Plastic wrap, 1 Rolling pin, 1 Cookie cutter (Form nach Belieben), 1 ggf. Toothpick oder Holzstäbchen, 1 Parchment paper, 1 Baking sheet, 1 Wire rack, 1 deep bowl, 1 Small knife, 1 Pastry brush

Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20cm x 30cm|8" x 12" baking tin and line the base with non-stick baking paper

Put 100g|1/2 cup of the butter into a mixing bowl with the sugar and beat until pale and fluffy.

Whisk in the eggs, vanilla and soured cream until blended.

Gently stir in 200g|1 3/4 cups of the flour. Spoon into the tin, level the surface, then lay the plum wedges on top.
5.
Rub the remaining butter and flour together in a bowl until crumbly. Stir in the demerara sugar and sprinkle over the cake.
6.
Bake for about 40 minutes until golden and a skewer inserted into the centre comes out clean. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
