For the pastry
2 cups gluten-free all purpose flour (plus extra for dusting)
1 pinch salt
½ cup butter
2 Tbsps water
For the filling
6 Tbsps sugar
24 ozs red Plum (halved, pitted, and cut lengthwise into 8 wedges)
1 Tbsp powdered sugar (plus extra for dusting)

Preparation steps

1.
For the pastry: put the flour and salt into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs. Stir in the water and mix to a dough. Wrap in cling film and chill for 30 minutes.

Heat the oven to 200°C (180° fan). Line a large baking tray with non-stick baking paper.

Roll out the dough on a floured surface out into a round, about 5mm thick. Place on the baking tray and sprinkle with a little sugar, leaving a 2.5cm|1" border

For the filling: arrange the plums, skin sides down, in 1 layer on top of the sugar, then sprinkle the plums with more sugar. Fold in the edges of the dough to cover the outer rim of the plums, pleating the dough as necessary.

Cover loosely with foil and bake for 40 minutes. Remove the foil and bake for a further 5 minutes until the plums are tender and the juices are bubbling.
6.
Place the baking tray on a wire rack and immediately brush the hot juices over the plums using a pastry brush. Dust the hot galette with icing sugar.
7.
Leave to cool to warm or room temperature, then dust with more icing sugar.
