- ½ cup Long grain rice (cooked according to packet instructions)
- ½ cup canned Kidney beans (drained and rinsed)
- ½ cup canned Lima bean (drained and rinsed)
- ½ cup canned Borlotti bean (drained and rinsed)
- ½ cup canned chickpeas (drained and rinsed)
- 2 Tomatoes (deseeded and chopped)
- ½ Cucumber (chopped)
- 2 leaves Iceberg lettuce (shredded)
- 2 Tbsps chopped parsley
- 2 Tbsps chopped Chives
- 2 Tbsps white wine vinegar
- 5 Tbsps olive oil
Preparation steps

Mix the rice in a large bowl with the pulses, tomatoes, cucumber, lettuce and chives
2.
Mix together the vinegar and oil, season with salt and pepper and stir into the salad.
