- 2 green Bell pepper
- 2 carrots
- 80 grams Enoki mushrooms
- 50 grams Yogurt (0.1% fat)
- 2 Tbsps Mayonnaise
- 2 Tbsps Crème fraiche
- 1 Tbsp sharp Mustard
- salt
- freshly ground peppers
- 12 slices Roast beef (cold)
Preparation steps

Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into thin strips.
Peel the carrot and cut into thin strips. Rinse the mushrooms and drain.

In a bowl, mix the yogurt with the mayonnaise, sour cream and mustard and season with salt and pepper. Brush the slices of roast beef with the yogurt mixture. Divide the vegetables among the roast beef, roll up and serve.
