- 1 Leg of lamb (about 1.8 - 2 kg)
- 6 garlic cloves
- 25 grams dried Apricot
- 2 Tbsps olive oil
- 1 kilogram potatoes
- 2 large onions
- salt
- freshly ground peppers
- fresh Apricot (for garnishing.)
- fresh mint (for garnishing.)
Preparation steps
1.
Peel 2 garlic cloves and cut into fine sticks. Cut dried apricots into fine sticks and mix with garlic. Make small incisions in meat and sruff with the mixture. Place lamb into a roasting pan, brush with olive oil and roast in preheated oven at 200°C (approximately 400°F) for about 40 minutes.

Peel potatoes and dice coarsely. Peel onions and chop coarsely. Peel the rest of garlic and chop coarsely.

After 40 minutes of roasting, remove meat from the pan and add potatoes, onions and garlic to the pan, season with salt and pepper and top with lamb. Roast for 1 more hour or until meat is tender. Turn vegetables over occasionally.

Arrange vegetables with lamb on a platter and garnish with apricots and mint leaves. Serve.
