- 4 inches Horseradish (peeled and grated)
- ½ lemon (juiced)
- 1 cup whipping cream
- 1 Tbsp sunflower oil
- 1 Tbsp butter
- 1 large white onion (sliced)
- 3 cups Roast beef (sliced)
- 4 white Rolls (split)
- salt
- freshly ground Black pepper

Replace the cream with half-fat creme fraiche or fromage frais for a lighter version.
Preparation steps

Combine the grated horseradish with the lemon juice and seasoning in a mixing bowl. Briefly whip the cream in a separate bowl until softly peaked. Drain the horseradish from the lemon juice and fold into the whipped cream.

Heat the oil with the butter in a large frying pan set over a medium heat until hot. Add the onion and a pinch of salt, sweating for 5 minutes until soft.

Fold slices of beef on top of the bottom halves of the rolls. Top with the onions and horseradish cream. Sit the tops of the rolls in place before serving.
