1 ⅕ kilograms roasted pork roulade
salt
freshly ground peppers
2 garlic cloves
2 Tbsps finely chopped Basil
1 Tbsp finely chopped parsley
1 tsp chopped oregano
200 grams paprika (dried and preserved in oil)
1 Tbsp lemon juice
1 tsp grated Lemon peel
3 Tbsps olive oil
200 milliliters dry white wine
sauce thickener (as desired)

Preparation steps

1.

Pound meat until flat and season with salt and pepper. Peel garlic and squeeze through a press into a bowl. Add herbs, lemon juice and 1 tablespoon oil to garlic. Drain and mince peppers. Add to herb and garlic mixture.

Spread herb and garlic mixture onto meat. Roll up and secure with kitchen twine. Season with salt and pepper, wrap roast in foil and chill for about 2 hours.

Heat remaining oil in a large roasting pan. Sear roast on all sides and deglaze with wine. Bake in an oven preheated to 150°C (approximately 300°F) until the meat is tender. Baste roast with wine throughout cooking time. Place roast under 250°C (approximately 480°F) broiler for about 5 minutes. Remove and slice. Season again and serve with pan sauce.
