- For the Crust
- 1 cup warm water
- 1 Tbsp sugar
- 2 ¼ tsps active dry yeast
- 3 Tbsps olive oil
- 1 tsp salt
- 2 ½ cups all-purpose flour
- For the Topping
- 2 Zucchini (sliced thin)
- 1 Tbsp olive oil
- 1 cup Mozzarella (shredded)
- 1 Tomato (sliced thin)
- 1 garlic clove (minced)
- ⅔ cup Feta (crumbled)
- ¼ cup fresh Basil (sliced)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

Preheat Oven to 465° F / 260º C.

Prepare your pizza crust by combining water, sugar and yeast and stirring until completely dissolved. Add in the olive oil and salt. Stir to combine.

Pour mixture into flour and slowly stir until combined. You may need to slightly knead the dough to make sure everything sticks together; but be careful not to over knead. Set dough aside for 10-15 minutes.

While dough is resting, over medium heat, saute zucchini in olive oil until zucchini starts to soften and change color; about 5 minutes. Season zucchini with a little salt and pepper.

On a pizza stone, or pizza pan, stretch dough out using your finger tips until evenly spread out to your desired size. Top pizza with mozzarella, tomato, and zucchini. Bake for 5 minutes.

Add garlic, feta cheese and basil; season with salt and pepper and bake an additional 5 minutes.
7.
Continue to bake for an additional 5 minutes. Slice, and serve.
