- 150 grams Cucumber
- 500 grams honeydew melon
- 3 slices Serrano ham
- salt
- freshly ground peppers
- 2 Tbsps Sherry vinegar
- 1 Tbsp dry sherry
- 1 pinch sugar
- 2 Tbsps scallions
- 2 Tbsps olive oil
- 2 Tbsps Orange juice
- Iceberg lettuce
Preparation steps

Rinse and halve cucumber, scoop out seeds with a spoon and cut lengthwise into thin strips. Season with salt and pepper. Halve ham slices lengthwise. Spoon a small amount of cucumber onto slices and roll up.

Rinse lettuce, spin dry and tear into bite-sized pieces.

Halve melon, scoop out seeds and remove rind. Cut melon into slices or pieces.

In a bowl, whisk together olive oil, sherry, sherry vinegar, 1 pinch sugar and orange juice. Season with salt and pepper.

Combine lettuce, melon and chives in a bowl. Toss with up to 2 tablespoons dressing, to taste. Divide salad among plates and serve with ham rolls. Drizzle ham rolls with remaining dressing and season with pepper.
