- 2 Tbsps Apricot Jam
- 1 tsp lemon juice
- 11 ozs Strawberries (sliced)
- 1.333 cups cream (48% fat)
- 9 ozs apple sauce
- To decorate
- sugar sprinkles
Preparation steps
1.
For the buns: sift the flour into a mixing bowl and make a well in the middle.

Crumble the yeast and dissolve with 1 tablespoon of sugar in a little warm milk.

Pour into the flour well and mix well until smooth. Put into the bowl, cover with oiled cling film and leave to rise in a warm place for about 30 minutes.

Add the remaining milk, sugar, butter and egg. Knead for about 10 minutes until smooth and elastic. Cover as before and leave to rise in a warm place for about 1 hour.

Heat the oven to 200°C (180° fan) 400°F gas 6. Line 2 baking trays with non-stick baking paper.

Knead the dough again and divide into 12-15 pieces. Shape into small balls and place apart on the baking trays.

Bake for about 15 minutes until golden brown. Place on a wire rack to cool completely.
8.
For the filling: press the jam through a fine sieve and add the lemon juice. Heat gently until melted.
9.
Whisk the cream until thick. spoon into a piping bag with a shell nozzle.
10.
Cut the buns horizontally and spread with the apple sauce.
11.
Top with the strawberries. Pipe the cream on top and place the tops of the buns on top. Brush with jam and decorate with sprinkles.
