Preparation steps

Heat 1 tbsp oil in a frying pan and fry the courgette slices on both sides until golden brown.

Whisk the eggs with the milk, salt, pepper and Parmesan.

Heat 1 tsp oil into a non-stick frying pan and pour in one quarter of the egg mixture and cook for 2 minutes until the base is firm to make a flat omelette (without folding). Keep warm.
4.
Repeat to make 3 more omelettes.
5.
Put the omelettes on plates and top with the courgette slices. Season with salt and pepper, garnish with basil and parsley leaves and serve immediately.
