- 2 ¼ cups self-rising flour
- 1 pinch salt
- ¼ tsp baking soda
- 1 pinch mustard powder
- ⅛ cup butter
- 2 Tbsps snipped Chives
- ¾ cup grated Cheddar cheese
- ¾ cup Buttermilk
- 1 egg white (lightly beaten)
Preparation steps
1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a large baking tray.

Sift the flour, salt, bicarbonate of soda and mustard into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.

Stir in the chives and half the cheese.
4.
Make a well in the centre and pour in the buttermilk. Mix to a soft, sticky dough.
5.
Drop heaped tablespoons of the dough on to the baking tray. Brush with the egg white and sprinkle with the remaining cheese.
6.
Bake for about 12 minutes, until puffy and golden. Serve warm.
