1 kilogram shrimp (peeled and deveined)
1 Tbsp dark soy sauce
2 Tomatoes
1 Tbsp Pastry flour
1 tsp sweet ground paprika
50 grams butter
salt
freshly ground peppers
1 sprig thyme
1 sprig rosemary
¼ l Broth
1 Tbsp Oyster sauce
20 grams cold butter
fresh Fresh herbs (for garnish)

Preparation steps

Rinse the shrimp, pat dry, then marinate in the soy sauce. Blanch the tomatoes for a few seconds in boiling water. Remove from the water and peel. Quarter, remove the core, and finely dice. Remove the shrimp from the soy sauce and drain. Mix the flour and the paprika. Toss the shrimp in the flour-paprika mixture.

Heat the butter in a large pan, add the shrimp, and cook for 4 minutes. Season to taste with salt and pepper. Remove the shrimp from the pan. Sauté the tomatoes, thyme, and rosemary in the remaining butter. Add the broth and the oyster sauce, and reduce until thickened slightly. Mount the sauce with the cold butter, and season to taste with salt and pepper.

Place the shrimp on a plate, and top with the sauce. Garnish with fresh herbs and serve.
