400 grams (approximately 14 ounces) Pork tenderloin
2 carrots (peeled and sliced)
200 grams (approximately 7 ounces) Tongu mushroom
1 bunch scallions (cleaned and cut into rings)
1 ginger (walnut-sized pieces; peeled cut into fine strips)
1 red chili pepper (cored, cut into thin strips)
2 Tbsps cornstarch
2 Tbsps sesame oil
1 garlic clove
3 Tbsps soy sauce
3 Tbsps dry sherry
2 Tbsps black Sesame seeds
salt
freshly ground peppers

Preparation steps

1.

Place the mushrooms in a bowl with boiling water to cover and leave for 20 minutes.

Cut the fillet into thin strips, sprinkle with cornstarch, tossing well to coat. Heat oil in a large skillet and saute the pork until just cooked through. Remove the pork with a slotted spoon and set aside.

3.

Drain the mushrooms and add them to the pan the pork cooked in along with the carrots, scallions, ginger and chile and saute, stirring occasionally until the vegetables are tender, about 8 minutes. Add the meat, deglaze with sherry and soy sauce, sprinkle with black sesame seeds and season with salt and pepper.

4.

Serve with rice.
