100 grams Celery
400 grams shrimp (peeled and deveined)
50 grams Bacon
1 tsp chopped cilantro
1 tsp Oyster sauce
1 tsp soy sauce
½ tsp red Curry paste
½ tsp finely grated ginger
salt
fresh cracked peppers
8 slices Toast
40 grams light Sesame seeds
600 milliliters vegetable oil (for frying)

Preparation steps

1.

Rinse and trim celery and chop very finely. Rinse shrimp and pat dry. Grind the shrimp and bacon finely through a meat grinder. Mix with the celery, cilantro, oyster sauce, soy sauce, curry paste and ginger and season with salt and pepper.

Remove crust from toast slices. Spread 2/3 of the shrimp mixture onto the slices of toast, then press 2 slices of the toast together firmly. Cut the toast diagonally, so that 8 triangles are formed. Coat the edges of the toast with the remaining shrimp mixture and press the sesame seeds into the coated edges.

Heat oil for frying to 170°C (approximately 325°F). Fry the triangles in batches until golden brown, 3-4 minutes. Remove from oil with a slotted spoon and drain on paper towels. Serve on plates while hot and crisp.
