- 2 Candied ginger
- 4 shiitake mushrooms (sliced)
- 6 cups vegetable stock
- ½ tsp salt
- 4 Tbsps light soy sauce
- 3 Tbsps Mirin
- 2 Tbsps Rice wine
- 14 ozs Udon Noodle
- 4 scallions (finely shredded)
- 3 Tbsps toasted Sesame seeds
Preparation steps
1.
Heat the ginger, mushrooms and half the stock in a pan and bring to a boil. Simmer for 15 minutes.

Add the salt, soy sauce, mirin and rice wine and simmer for 1 minute.
3.
Bring the remaining stock to a boil in a pan. Add the noodles and cook for about 5 minutes, until tender. Drain thoroughly and divide among 4 serving bowls.
4.
Pour over the soy sauce broth and garnish with spring onion and sprinkle with sesame seeds..
