2 Puff pastry dough (frozen 220 grams)
Parchment paper
Dried legumes
1 egg yolk
200 grams Crème fraiche
50 grams Whipped cream
1 Tbsp Lime juice
1 Tbsp parsley
1 garlic clove
1 chili pepper
salt

16 small shrimp (ready to cook)
2 Tbsps olive oil

2 Ramekins (about 14 cm)

Preparation steps

1.

Thaw puff pastry. Then roll out and line the ramekins with it. Cut parchment paper into ramekins size, put on the dough, place dried legumes and brush the dough crust with slightly beaten egg yolks.

Bake in a preheated oven (180°C) (approximately 350°F) for about 25 minutes until golden brown. Removing legumes and parchment paper and allow to cool.

Heat shrimp in a skillet in hot oil for a few minutes. Cook on high heat on both sides, season with salt and pepper, and leave to cool.

4.

Peel garlic. Rinse chile, trim, cut in half, remove seeds and ribs and very finely chop.

5.

Mix creme fraiche with cream and lime juice, pressed garlic, chile and parsley and season with salt and pepper to taste.

6.

Spread cream with shrimps on the baked pastry and serve garnished as desired with lime zest and parsley.
