½ cup unsalted butter (at room temperature)
1 ¼ cups granulated sugar (plus extra for sprinkling)
1 tsp pure vanilla extract
2 large eggs
2 cups unbleached all-purpose flour
½ tsp salt
2 tsps Baking powder
½ cup milk
2 ½ cups fresh Raspberries (rinsed and picked over)

Preparation steps

1.
Preheat oven to 375º F / 190º C. Line standard size muffin tin cups with paper or foil liners.

Using an electric mixer set on medium speed, in a large mixing bowl, cream together butter, sugar and vanilla. Add eggs and mix well to incorporate.

In a separate bowl, combine flour, salt, and baking powder. Slowly add the dry mixture to the butter mixture, alternating adding the milk; mix to combine.

By hand, gently fold in the raspberries.

Divide the batter evenly among the prepared muffin cups, filling each muffin cup almost to the top. Sprinkle each muffin top lightly with granulated sugar. Bake for 20 to 25, or until golden and cooked through. Cool in pan on a wire rack for ten minutes. Remove from pan and cool further on wire rack. Serve.
