- 2 large eggs (beaten)
- 2 cups low-fat Cottage cheese
- 5 ¼ cups frozen, chopped Spinach (thawed and well drained)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 3 cups prepared spaghetti sauce (divided)
- 3 cups Mozzarella (divided)
- ½ cup grated Parmesan (divided)
- 12 Lasagne noodle (noodles)
Preparation steps

Preheat oven to 350°F.

In a large bowl, combine eggs, cottage cheese, and spinach; season to taste with salt and pepper.

Spread 1 cup spaghetti sauce in the bottom of a 13 x 9-inch baking dish. Layer 4 lasagna noodles, and 1/2 of the cottage cheese mixture. Sprinkle 1 cup of mozzarella and half of the Parmesan over the top. Spoon 1 cup of sauce over the cheese and lay down a layer of noodles and the remianing cottage cheese mixture. Sprinkle with 1 cup mozzarella. Top with remaining noodles, sauce, mozzarella and Parmesan cheeses.

Bake for 40 to 45 minutes or until heated through and bubbly. Let stand 10 minutes before slicing and serving.
