2 ½ cups Cranberry
4 Tbsps concentrated Pear juice
½ cup Orange juice
2 Boskop Apple (diced)
2 Tbsps Oil
1 onion (diced)
salt
peppers
18 ozs Pumpkin (sliced)
¼ cup stock (turkey or vegetable)
To garnish
4 sprigs thyme
4 sprigs Basil

Preparation steps

1.
Mix the cranberries with the concentrated pear juice, orange juice and diced apple.
2.
Heat 1 tablespoon oil in a frying pan and gently cook the onion until translucent. Add the cranberry mixture and cook gently for 3 minutes. Season to taste with salt and pepper and leave to cool.
3.
Heat the remaining oil and cook the pumpkin until tender.
4.
Pour in the stock, cover and cook gently for 10 minutes.
5.
Serve with the cranberry relish and garnish with thyme.
