- 3 medium, cooked potatoes
- 2 large eggs (beaten)
- ½ tsp salt
- 1 ½ cups all-purpose flour
- 16 damson (pitted)
- 16 Sugar cube
- ½ cup butter
- 1 cup breadcrumbs
- sugar (for sprinkling)
Preparation steps
1.
Mash the potatoes in a mixing bowl and beat in the eggs and salt. When well combined, add the flour and mix to a soft dough.

Place a sugar cube in the centre of each damson.
3.
Using lightly floured hands, take a portion of dough and pat it flat in your hand. Place a damson in the centre and bring the sides of the dough up over the damson to enclose it completely. Moisten the edges if necessary to seal. Repeat with the remaining dough and damsons.

Bring a large pan of lightly salted water to a boil.

Carefully place the dumplings in the boiling water and cook for 20 minutes, until cooked through. You will need to do this in batches to avoid overcrowding the pan. Drain in a colander.

Melt the butter in a frying pan and cook the breadcrumbs until crisp and golden.
7.
Place the dumplings on serving plates and spoon the buttered crumbs over and around the dumplings. Sprinkle with sugar and serve warm.
