7 Tbsps all-purpose flour
½ cup sugar (plus extra for coating)
4 cups milk
1 Cinnamon stick
¼ cup olive oil
2 Tbsps butter
2 eggs (beaten)

Preparation steps

1.
Lightly oil a 25cm|10" square baking tin or dish.
2.
Mix together the cornflour, 3 1/2 tablespoons of the flour, and the sugar together in a mixing bowl. Add 225ml|1 cup milk and whisk well. Leave to stand for 10 minutes.
3.
Heat the rest of the milk in a large pan with the cinnamon stick over a low heat. When the milk begins to simmer strain it little by little into the sugar and flour mixture, stirring well.
4.
Pour the mixture back into the pan and cook, stirring over a low heat for 10 minutes. Pour the mixture into the tin. Leave to cool, then chill overnight.
5.
Heat the oil in a frying pan to a depth of 5mm|1/4". Add the butter.
6.
Turn the mixture out of the tin and cut into 6cm|2 1/2" squares.
7.
Dredge each of the squares in the remaining flour, dip in the beaten egg and fry in the hot oil for approximately 1 minute on each side, until very lightly golden.
8.
Gently toss in sugar to coat and leave to cool.
