- 300 grams
- 250 grams Chorizo (air-dried garlic sausage)
- 300 grams mixed Vegetables chopped (zucchini, peppers, tomatoes, carrots .... small)
- 1 onion (coarsely chopped)
- 2 tsps thyme
- 600 milliliters Vegetable broth
- 250 milliliters Tomato juice
- 6 stuffed green Olives
- salt
- peppers
- cayenne pepper
- olive oil
Preparation steps

Heat a little olive oil in a skillet. Slice the chorizo saute until lightly browned, Remove with a slotted spoon. Add the onion to the pan and sauté along with the vegetables and thyme until the onion is translucent. Add the rice, stirring to coat. Pour in the tomato juice and broth, bring to a simmer, cover and cook over low heat for 10 minutes.

Cut olives into thin slices and stir into the rice. Season with salt, pepper and a pinch of cayenne, or more to taste. Stir in the chorizo and serve.
