- 2 eggs
- ⅞ cup cane sugar
- 1 baking soda
- 1 organic lemon (zest grated)
- ground White pepper
- ground cloves
- ground Cardamom
- ground Nutmeg
- ground allspice
- 1 tsp ground cinnamon
- 1 ⅔ cups Whole meal flour
- 2 ½ cups Oatmeal
- 0.333 cup candied Lemon peel
- 4 Tbsps milk
- butter (to grease the baking tray)

1 Cutting board, 1 Sieve, 1 Small knife, 1 Measuring cups, 1 Blender, 1 Paper towel
Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease a baking tray.

Beat together the eggs and sugar. Dissolve the baker's ammonia in a little cold water and stir it into the egg mixture along with the lemon zest and the all the spices.
3.
Sprinkle the whole meal flour, oatmeal and the candied lemon peel into the mixture, add the milk and knead well.
4.
Roll out the dough approximately 1 cm thick. Cut out circles approx. 3 cm in diameter and place them on the baking tray. Bake in the middle of the oven for around 15 minutes. Remove from the baking tray and leave to cool.
