- 2 ½ cups ground lamb
- 1 small Squash (peeled and diced)
- 2 Tbsps cilantro (chopped)
- 1 tsp ground cilantro
- salt

- bay leaves (to garnish)
- ½ cup red Chard leaf
- 4 Raisin buns (halved)
- 1 cup Bean sprout (to garnish)
- 1 cup canned chickpeas (drained)
- ½ lemon (juiced)
- 2 cloves garlic cloves (minced)
- 1 tsp ground Cumin
- 1 tsp paprika
- ¼ cup Tahini
- 3 Tbsps water
- 2 Tbsps extra-virgin olive oil
Preparation steps

Prepare the chickpea puree by combining the chickpeas, lemon juice, garlic, salt, tahini, extra-virgin olive oil and water in a food processor and blitzing until smooth. Transfer to a bowl and reserve until needed.

Blanche the diced squash in boiling salted water for 2-3 minutes. Drain and allow to cool.

Combine the lamb mince with seasoning, ground coriander, the squash and chopped coriander in a large mixing bowl.

Mix well and shape into four even sized balls. Flatter with your palm to make patties.

Grill for 15-17 minutes, turning occasionally until golden brown and cooked.
6.
Arrange the burgers by spreading some of the chickpea puree on the base of the raisin rolls.
7.
Top with a lettuce leaf and some red chard.
8.
Arrange the lamb patties on top, then follow with a small handful of the beansprouts.
9.
Transfer to serving plates and rest the top half of the roll on the edge of the patties before serving.
