- For the cakes
- 1 large egg
- ⅔ cup sugar
- 0.333 cup sunflower oil
- 1 tsp maple extract
- ⅔ cup cooked, mashed Sweet potato
- 1 cup self-rising flour
- 1 tsp ground cinnamon
- 1 pinch grated Nutmeg
- 1 pinch Mixed spice
- 1 pinch salt
- ¼ cup Buttermilk
- 2 Tbsps finely chopped Pecan
- For the icing
- 1 cup powdered sugar
- water
- maple extract
Preparation steps

For the cakes: heat the oven to 180°C (160° fan) 350°F gas 4. Grease 6 maple leaf Bundt tins.

Whisk together the egg and sugar in a mixing bowl until thick and pale.

Add the oil and maple extract and beat until blended. Add the mashed sweet potatoes and beat until blended. ,

Sift in the flour, spices and salt and stir into the mixture. Gradually stir in the buttermilk and pecans.

Spoon into the tins and bake for about 15 minutes, until firm to the touch. top. Cool in the tins on a wire rack for 5 minutes, then invert onto a wire rack to cool completely.

For the icing: sift the icing sugar into a bowl and beat in just enough water to make a smooth thick icing. Beat in the maple extract.
7.
Drizzle the icing over the cakes and leave to set.
