- ½ cup unsalted butter
- ½ cup coconut sugar
- 2 eggs (beaten)
- ¾ cup all-purpose flour
- ¾ cup self-rising flour
- 1 tsp ground cinnamon
- 4 Tbsps milk
- 12 red Plum (pitted, halved)
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 8 x 5cm|2" mini loaf tins.

Beat together the butter and sugar in a mixing bowl until creamy.
3.
Gradually beat in the eggs, with a little of the flour.
4.
Sift in the remaining flours and cinnamon and fold into the mixture with the milk until a dropping consistency.
5.
Spoon into the tins and arrange 3 plum halves on top of each cake, hollowing out the cake mixture slightly.
6.
Bake for 25-30 minutes until risen and golden. Cool in the tins for 15 minutes, then place on a wire rack to cool completely.
