- 18 ozs skinless, boneless Chicken breasts (cut into chunks)
- 1 lemon (juice)
- 2 Tbsps olive oil
- 2 cloves garlic cloves (crushed)
- 1 tsp Ginger paste
- ⅔ cup plain Yogurt
- ½ tsp Chili powder
- ½ tsp ground Cumin
- 1 tsp Coriander
- 1 tsp Mustard seed
- ½ tsp Garam Masala
- ½ tsp salt
- To garnish
- Lemon wedge
- cilantro
- To serve
- Basmati rice
Preparation steps
1.
Make cuts in the chicken and place in a non-metallic bowl.

Mix together the remaining ingredients and mix with the chicken. Cover with cling film and chill for at least 4 hours.
3.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tin with non-stick baking paper.
4.
Place the chicken in the tin and cook for 10-15 minutes until the chicken is cooked through.
5.
Garnish with lemon wedges and snipped coriander and serve with rice.
