- 1 Tbsp Oil
- 2 large onions (thickly sliced)
- 1 clove garlic cloves (crushed)
- 4 skinless, boneless Chicken breasts (cut into chunks)
- 4 Tbsps Balti Curry paste
- 14 ozs canned Tomatoes
- 1 cup chicken stock
- 2 Tbsps chopped cilantro
Preparation steps

Heat the oil in a large pan and cook the onions and garlic for 5 minutes until golden and softened. Remove from the pan and set aside.

Add the chicken to the pan and cook for a few minutes until browned on each side, then stir in the balti paste and onions.

Cook, stirring for a few minutes, then pour in the tomatoes and stock and stir well. Bring to a boil, then reduce the heat and simmer for about 25 minutes until the chicken is cooked and coated in the sauce. If the sauce is too thick add more stock.
4.
Sprinkle with chopped coriander and serve with naan bread.
