For the cupcakes
½ cup butter
¼ cup superfine caster sugar
0.333 cup light brown sugar
2 eggs
1 cup self-rising flour (sifted)
2 tsps instant Espresso powder (dissolved in 1 tbsp boiling water and cooled)
For the icing
2 ½ cups powdered sugar
warm water
grey Food coloring
For the ghosts
powdered sugar
1 ¼ cups white Sugar paste
Licorice candy (or chocolate chips)

Preparation steps

1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole bun tin.

Beat the butter and sugar in a mixing bowl until light and fluffy, then beat in the eggs, one at a time with a little of the flour, until smooth.

Stir in the cooled coffee, followed by the remaining flour and stir gently until blended.

Spoon into the paper cases and bake for about 20 minutes, until risen and springy to the touch. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.

For the icing: sift the icing sugar into a bowl and beat in just enough warm water to make a stiff icing.

Swirl through the grey colouring, using a skewer to give a marbled effect.
7.
Spoon onto the cupcakes as in the photo.
8.
For the ghosts: roll out the sugarpaste on a surface dusted with icing sugar. Cut out 12 ghost shapes with a cutter or card template. Press in the sweets or chocolate chips for the eyes and mouth.
9.
Place in the icing and leave to set.
