2 eggs (beaten)
¾ cup milk
2 cups all-purpose flour
4 tsps Baking powder
2 tsps ground cinnamon
½ cup superfine caster sugar
1 pinch salt
For the frosting
2 egg whites
1 pinch salt
1 ½ cups caster sugar
5 Tbsps water
¼ tsp cream of tartar
1 tsp vanilla extract
For the decoration

1 Skillet, 1 Plate, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Fine grater, 1 Brush, 1 Lid, 1 Citrus juicer, 1 Slotted spatula

Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in a 12 hole muffin tin.

Mix together the butter, eggs and milk.

Sift the flour, baking powder and cinnamon into a mixing bowl. Stir in the sugar.

Pour the egg mixture into the dry ingredients and stir until only just combined and the mixture is still slightly lumpy.

Spoon the mixture into the muffin tins. Bake for about 15-20 minutes until risen and golden. Leave in the tins for 5 minutes then place on a wire rack to cool.

For the frosting: put all the ingredients except the vanilla into a heatproof bowl over a pan of lightly boiling water. Whisk for 7-8 minutes until the frosting thickens and forms firm peaks. Remove from the heat and add the vanilla. Beat until thick and spreadable.
7.
To decorate: spoon the frosting on the muffins and spread some with a palette knife to form a smooth flat surcace. Swirl the frosting on the other muffins into peaks. Decorate some muffins with sugar stars. Use a stencil to sprinkle the sugar crystals into stars and wavy lines on the remaining muffins.
