30 mussels
150 grams Rice
40 grams Currants
2 Tbsps olive oil
30 grams Pine nuts (chopped)
2 onions (minced)
1 tsp Tomato paste
¼ tsp freshly ground peppers
¼ tsp cloves (ground)
¼ tsp Ground cinnamon
¼ tsp ground paprika
½ tsp allspice (ground)
1 Tbsp sugar
salt
2 Tbsps parsley (minced)

Preparation steps

1.

Soak rice soak in warm salt water until water is cold. Soak currants in warm water for 30 minutes. 

2.

Heat oil in a pan and sauté pine nuts and onions. Add drained rice and tomato paste and cook briefly. Add spices, currants, sugar and a pinch of salt, to taste.

Deglaze with boiling water, enough to cover contents. Cover and simmer over low heat for about 10-15 minutes. Stir in parsley, remove from heat and let rest for 10 minutes.

Rinse mussels.

Prepare a steamer and fill with water.

Add mussels and rice to steamer. Cover with a plate to prevent mussels from opening during steaming.

7.

Steam for about 20-30 minutes. Remove mussels from shells and place in rice.

Plate rice and serve garnished with parsley and lemon wedges.
