- ½ cup butter
- 1 cup caster sugar (scant)
- 3 eggs (beaten)
- ½ tsp Almond extract
- ⅜ cup plain Yogurt
- 1 ¾ cups self-rising flour
- 6 Plum (pitted and cut into wedges)
- ¼ cup brown sugar
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 20cm x 30cm|8" x 12" baking tin and line the base with non-stick baking paper

Beat the butter and sugar in a mixing bowl until pale and fluffy.

Whisk in the eggs, almond extract and yoghurt until blended.

Gently stir in the flour. Spoon into the tin, level the surface, then lay the plum wedges on top.
5.
Sprinkle the demerara sugar over the top.
6.
Bake for 30-40 minutes until golden and a skewer inserted into the centre comes out clean. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
