- 1 cup rice bran
- 1 cup Almond flour
- 1 Tbsp gluten-free Baking powder
- 0.333 cup sugar
- ½ cup dried Cherries
- 0.333 cup Medjool Date (quartered)
- ¾ cup chopped almonds
- 2 eggs
- ¼ cup sunflower oil
- ¾ cup milk
- 4 Tbsps melted butter
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole muffin tin.

Put the rice bran, ground almonds, baking powder sugar, cherries, dates and chopped almonds into a mixing bowl.

Whisk together the eggs, oil, milk and butter, and stir into the rice bran mixture. Stir well until well mixed.

Pour the mixture into the paper cases. Bake for 15-20 minutes, or until a knife inserted into the middle comes out clean. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
