¾ cup unsalted butter (at room temperature; plus extra for pan)
½ cup packed, light brown sugar
½ cup granulated sugar
3 large eggs
1 tsp pure vanilla extract
2 tsps finely grated lemon zest
1 ½ cups all-purpose flour (spooned and levelled) plus 2 tablespoons to dust the plums
1 tsp baking soda
¼ tsp salt
¼ cup Sour cream
4 Plum (halved; pitted and cut into wedges)
Sugar pearls (or powdered sugar)

Preparation steps

1.
Preheat oven to 375º F / 190º C. Butter a 9 x 3-inch / 23 x 8 cm springform pan and line the bottom with parchment paper.

Using an electric mixer, beat butter and sugars together until light and fluffy. With mixer on low, beat in eggs, one at a time until blended, add vanilla and lemon zest.

In a large bowl, whisk together 1 1/2 cups flour, baking soda, and salt. Gradually beat in add half of the flour mixture, followed by the sour cream. Add the remaining flour mixture; mix just until combined. Spread batter into into the prepared pan and smooth top with an off-set spatula.

In a bowl, toss sliced plums with 2 tablespoons of flour. Arrange the plums in circular fashion on top of the batter.
5.
Bake for about 30 minutes or until golden brown; loosely tent with foil and bake until cake pulls away from side of pan, about 35 minutes more. Let cake cool completely in pan. Run knife around cake edge and remove cake from pan. Dust with sugar pearls or confectioners' sugar prior to serving.
