- 11 ozs damson
- ⅔ cup coconut sugar
- water
- For the cakes
- ½ cup unsalted butter
- ½ cup coconut sugar
- 2 eggs
- 1 cup self-rising flour
- 1 unwaxed lemon (finely grated zest)
- To decorate
- sliced almonds
Preparation steps
1.
Place the damsons, enough water to just cover the fruit and sugar into a heavy-based pan. Bring to a simmer and cook, stirring from time to time, for 15-20 minutes.

Remove from the heat and drain in a colander. Set aside to cool

Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 4 individual ovenproof pudding basins or dishes.

For the cakes: beat together the butter and sugar until smooth. Add the eggs one at a time, beating well after each addition.
5.
Sift in the flour and fold in gently with the lemon zest.
6.
Place a spoonful of damsons into the base of each mould and spoon the mixture over the top. Spoon a few more damsons on top.
7.
Bake for 20- 30 minutes until golden. Sprinkle the flaked almonds over the top. Serve warm.
