- 2.333 cups self-rising flour (plus extra for dusting)
- 1 tsp Baking powder
- salt
- ½ cup butter (cubed)
- 2 Tbsps caster sugar
- ⅔ cup raisins
- ⅞ cup 2% milk (warmed)
- 1 tsp vanilla extract
- 1 Tbsp lemon juice
- blackcurrant Jam (jelly)
- Clotted cream (to serve)

Warm the milk in a microwave for 20 - 30 seconds to get the right temperature.
Preparation steps

Preheat the oven to 200°C (180° fan)|400F|gas 6.

Stir together the flour, baking powder, and salt in a large mixing bowl. Add the butter and rub into the flour with your fingertips until it resembles rough breadcrumbs.

Stir in the sugar and then add the raisins, warmed milk, vanilla extract, and lemon juice, mixing until a dough comes together.
4.
Dust a work surface with flour and fold the dough on it a few times. Pat and shape into a round approximately 4 cm | 1 1/2" thick.
5.
Use a 5 cm | 2" straight-sided cutter to stamp out rounds of the dough. Arrange on a large baking tray, spaced apart.
6.
Bake for 12 - 14 minutes until golden on top and risen. Remove to a wire rack to cool before serving with jam and clotted cream.
