- For Pizza Crust
- 3 cups Bread flour (plus extra for work surface)
- 2 tsps salt
- 1 Tbsp sugar
- 3 packets Yeast
- 1 cup warm water
- ½ cup Oil
- For Pizza Topping
- 3 boneless, skinless Chicken breasts (halves)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 2 cups prepared Barbecue sauce (divided)
- 2 cups Mozzarella (shredded)
- 1 Red onion (peeled and diced)
- 1 tsp dried Italian seasoning
Preparation steps

In the bowl of a standing mixer, combine flour, salt and sugar. Dissolve yeast in warm water and add to flour mixture. Add oil and mix together until dough is smooth and begins to pull away from sides of bowl. Cover bowl and let sit for about 1 hour, or until the dough has doubled in size.

While dough rises, prepare chicken. Preheat oven to 400° F / 200º C. Season chicken on both sides with salt and pepper and place in a shallow baking dish. Pour 1 cup of barbecue sauce over chicken, turning to coat both sides. Bake for 20 for 25 minutes or until chicken is cooked through. Remove from oven, cool slightly and dice; set aside.

Sprinkle flour over a clean work surface. Remove dough from bowl and split into two balls. Roll each ball into a circle, about 12-inches in diameter, place on a greased baking sheet or pizza stone. Poke holes in the dough with the tines of a fork.

Spread remaining barbecue sauce evenly over each pizza crust. Top with cheese, chicken, onions and seasoning.

Bake for 15 to 20 minutes or until edges of crust are golden brown. Slice and serve.
